I believe that the journey towards a healthier, more sustainable lifestyle doesn’t come with a one-size-fits-all approach. We all have a unique journey to walk when it comes to pretty much everything. Let me tell you a short version of my food journey to this day. I used to bake cakes, pastries, and pretty much anything I could think of. I loved baking! I used wheat flour, and refined sugar in all kinds of forms, coloring my cakes with edible food colorants, pastes, etc. The cakes and baking goods were as pretty as rainbows! But, I had to walk enough kilometers, miles, or whatever you prefer, to realize how nutrient-poor sweets and food in general, I was making and even worse, serving to my family. It hit me like lightning, and I decided to make a 180-degree turn. During this past decade and a little more, I´ve opened a raw food lunchcafé, had a catering company, I’ve become a dietary specialist specialized in food allergies, and worked on numerous projects alone and with others. It took me this long to finally wrap everything up in the form of a blog about what my main interest is: a non-toxic lifestyle that nourishes both mind, body, and soul.
It’s about making choices that align with your values, and that includes what’s on your plate.

The Green Smoothie Revival:
- Let’s kick things off with a green smoothie that’s like a morning hug for your body. Blend a handful of spinach, a handful of mango, 1 pear, 1 apple, 1 tbsp of chia seeds, 1 tsp of green powder of your choice, and a splash of almond milk. Mix with a blender into a smoothie. Voila! You’ve got a vibrant, nutrient-packed smoothie to start your day on the right note.
Eggplant Burger Extravaganza:
- Say hello to the superhero of grains – quinoa! You need 1 eggplant, 1 dl of cooked quinoa, a handful of cherry tomatoes, a few leaves of kale and hummus, and salt and pepper for seasoning. It’s a satisfying meal that’s perfect for a light lunch or dinner.
Cut the eggplant into 1 cm thick slices. Salt lightly by sprinkling salt over the slices so that the eggplant slices start to “sweat”. Cook Quinoa according to instructions. Season with salt and pepper. Wash the kale leaves and tear them into small pieces. Put the kale in a bowl, add a splash of olive oil, and salt, and rub with your fingers in circular motions, you will notice after a while that the kale starts to soften. Fry the eggplant slices in a pan. Assemble the burger on a plate with the other ingredients.
